What you need:
3/4 cup sugar
1/2 cup butter or margarine
3 very ripe bananas
2 eggs
1 1/4 wheat flour
1/4 t. salt
1 t. baking soda
1 t. vanilla
1 c. pecans
3 T wheat germ (optional)
1. Preheat oven to 350 degrees.
2. Cream sugar and butter with a fork.
3. Mash bananas and add to sugar mixture.
4. Beat two eggs and add to mixture.
5. Add vanilla and stir well.
6. In a small bowl, combine wheat flour, salt, wheat germ, and baking soda.
7. Add to sugar mixture and stir until just combined.
8. Gently fold nuts into mixture.
9. Pour into a loaf pan.
10. Bake for 55 minutes at 350 degrees. Voila! Moist on the inside and crispy on the outside. Yummmmm....
