Mediterranean Salmon


What a beautiful combination of flavors.  I just love anything mediterranean and the orange juice makes the tomatoes so sweet!



Serves Four

Ingredients:
4 salmon fillets
2 green onions thinly sliced
4 cloves of garlic thinly sliced
2 cups of cherry tomatoes
2 teaspoons oregano
1/2 medium red onion
1 cup orange juice
1 teaspoon red wine vinegar
salt and pepper to taste
About 15 olives, pitted and chopped

Directions:

1.  Saute red onion for several minutes on medium high heat.  Turn heat down to medium and add garlic and oregano.  Saute a few minutes longer.
2.  Add tomatoes, orange juice, green onions, olives, and red wine vinegar.  Let simmer for about 5 minutes.
3.  Nestle the salmon fillets in the sauce and turn the heat down to medium low.  Cover and cook for another 15 minutes or so, spooning some of the juice onto the salmon every five minutes or so.


4.  When salmon is cooked through, salt and pepper to taste.
5.  Serve salmon on plates and spoon the mixture with juices over the salmon.
